Short and sweet and some meal prep
It is that time of year..where every minute of the day on the weekends is spent in the combine, in the big blue truck, or in the tractor...such is the "farmlife" but I absolutely love harvest even if I don't see my husband much...maybe that is why I like it...
I kid, I kid.

I am guessing you know who the popular one is between mom and dad...
I don't hold a candle to farming with Grandpa and Dad so the boys do spend quite a bit of time out in the fields helping them which leaves me to get some major meal prep done...

And for supper last night, Bison Meatloaf...it was fantastic, and it was so easy. I had never tried Bison so when I saw it at Costco I thought we would give it a whirl this weekend.
Recipe:
Ingredients:
1 package of Bison meet(Costco 1.25 pounds)
1/4 cup coconut flour
1 tablespoon of cumin
1 tablespoon of onion salt
1/2 onion
1 pepper (yellow, red)
1 egg
1 6oz can of tomato paste
Directions:
Preheat oven to 350 degrees
While oven is preheating, saute the onion and peppers in a pan till onions have caramelized
Mash everything together in bowl and place in medium sized baking dish
Line the top with 8-10 pieces of bacon
Bake for 35-40 minutes or till meat is cooked through

P.S. There is snow in the forecast tonight....I am so not ready for that. It will make for a long winter if it shows up that early.
