Last night we had nothing on the schedule...


That's a rarity around these parts...but it was really nice...

the hubby worked on a project for me

I cleaned and made this awesomeness

Kale, Roasted Chicken, and Broccoli Casserole

Ingredients
  • Leftover Rotisserie chicken or you can bake/fry your own chicken
  • 1 handful of sliced mushrooms
  • 1 bag of broccoli florets (can use fresh if you want)
  • 1 tablespoon of garlic
  • 1/4 cup lite coconut milk
  • 1/2 cup almond milk
  • 1/2 cup vegetable broth
  • 2 handfuls of Costco Kale Salad mixture
  • 2 teaspoons of garlic salt
  • 1 teaspoon of paprika
  • 1 teaspoon of Trader Joe's Original Spice blend
  • Pinch of Salt
  • Pepper to taste
Instructions
Put frozen bag of broccoli into saute pan
While this is cooking mix your liquids and spices together in seperate bowl
Let the broccoli cook up, adding garlic halfway through so the garlic an absorb into the broccoli
Add the rotisserie chicken and mushrooms and let cook
When chicken is heated add 2 handfuls of Kale salad mixture
Add your liquid/spice mixture(mine was runny, I will have to add something to make it creamier next time)
Let all meld together on stove, remove from heat to cool and sauce to thicken(like I said, mine didn't thicken) even runny, it tasted awesome!
