Paleo Pumpkin Spice Muffins

Hopefully by now I have been instagramming (cswfityoga) all the fun I am having in Chicago and and at the wedding....but while I am there, I have a recipe for you....

I got the fall itch...

I needed the warmness of the orange, reds, and golds.....

 the sweet scent of pumpkin wafting throughout the house

and I needed to bake with pumpkin...my hands were twitching....I can't help myself.  So here we are...

Paleo Pumpkin Spice Muffins

Ingredients
  • 1/2 cup coconut flour
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup canned pureed pumpkin
  • 4 eggs
  • 1/4 cup honey, maple syrup, or a combination of the two
  • 2-3 tbsp coconut oil
  • 1 tsp vanilla extract
  • Coconut for topping
Instructions
Preheat oven to 400 degrees F. Lightly oil muffin pans.
In a bowl, combine the coconut flour, spices, baking soda/powder and salt.
In another bowl, place the pumpkin then add the eggs one at a time,I find it worked better to mix each egg in before adding another.
Add oil, honey, and vanilla and mix until well combined.
Add the flour mixture to the pumpkin mixture, blend with a whisk until lumps have disappeared.
Spoon into muffin pan, filling each muffin 2/3 full.
Top each muffin with some coconut and bake for 18-20 minutes, or until golden.
Place on wire rack to cool.
