It's my Friday........

As I write this I am just giddy because today is my Friday and thus begins our family vacation.  Mind you, we have two smallish kids so vacation to them could be going to the park.  This year we are embarking to the Mall of America where we will check out the Aquarium and the Nickelodeon Area.  Buy online and you get a great discount...FYI.  Before we head there though, we are heading to the Iowa State Fair.

This is annual tradition in my family, and I have gone every year since I can remember.  We meet my parents, sister and brother in law, and we eat  walk  our way through the fairgrounds. As of this year there are 57 things you can eat on a stick. (warning you might gain ten pounds while reading the list) I will take plenty of pictures and food shots so you can have the "fair experience"

Concluding the vacation will be a stop at our friend's house(they moved away...I am still a bit bitter about it, and I am only going because they just had a little baby boy who I need to love and squeeze:) Ending the trip will be a stop at my parent's house for my hometowns Fun Days celebration complete with a parade that B and his cousin Pey will be leading their horse in...wooo, I am exhausted typing this.  Gotta love family times!!!


So, tonight will be busy packing and packing and more packing.

Yesterdays eats:
Breakfast:
Warm pan with Coconut Oil, I use Nutiva and love it
2 eggs
1/4 cup sweet potatoes diced(already precooked from day before)
Big ole handful of spinach...
Saute spinach and sweet potatoes till spinach is wilted, add eggs
When eggs are done to your liking, eat up!!!
The combo of eggs and sweet potatoes is fantastic!


Lunch was out with the residents at my facility for our monthly lunch bunch.  I partook in a tenderloin, no bun with ketchup and pickles...it was superb!


 Speaking of superb...this bacon is out of this world. A little preface, I don't do bacon because I hate all the fat and crap that comes along with it, and it tastes salty and blah.  But, I am doing a bit of a Paleo diet trial and bacon is a major player so I had to suck it up.  I found this Applegate naturals in our health foods section and thought I would give it a whirl.

OMG, it was delicious, I seriously could of ate the whole package, but I refrained.  Not salty, kind of sweet, not fatty.  I am hooked and will be repurchasing this!  I got some Hormel Natural Bacon too to try, so I will give you the review when I prepare that!

Sauteed Zucchini with Turkey Bacon and Spinach
1 zucchini sliced or diced
1 tsp of Nutiva Coconut Oil in pan
Saute zucchini to your desired "texture" 
Add spinach and let wilt
Add Applegate Turkey bacon(I had already cooked beforehand) and saute till warm
Serve...

Workout last night consisted of a cardio/leg strength workout...I combined my strength workout for the night with some cardio moves.  Good workout, good sweat, good night!

  2. I have had their Chipolte chicken/turkey sausage and their lunchmeats.Excellent.Will try the bacon next.LOVE bacon and tomato ,I eat the tomato alone on Ezekial bread but will be nice to add some bacon!
