Clean Eatin S'mores...nuff said!
Realized I never blogged yesterday. Work was crazy, work was a late night, and my babies needed some mom time when I got home, and I needed my babies!! So here is Monday in a quick recap.
Food:
Breakfast: 2 ingredient pancakes with Organic (Costco) Strawberry Jam
Lunch: Boring salad with chicken breast,tomatoes
Work Snack: Clean Eating S'mores... we don't need no fire
Supper: Leftover Roasted Broccoli Slaw with Salsa Chicken
Pay attention, this is going to get difficult
Starting 1/2 marathon training, 3 miles

Pay attention, this is going to get difficult
Roasted Broccoli Slaw
Melt a little coconut oil in a bowl
Sprinkle some Italian seasoning in, add the broccoli slaw and toss it to coat it
Place it in the oven at 350 degrees and roast it for about 20 minutes.
Salsa Chicken
Cook 3-4 chicken breasts
Grab a 9x13 pan
Pour in a thin layer of salsa
Add chicken to salsa and add another layer of salsa over it
Optional: Sprinkle cheese on top
Bake until everything is heated through and melty (technical term)
