My favorite summer salsa

Warning..this recipe is dangerously addicting and good for you! I am linking up with Fitness Friday Blog Hop and Sparkles and Bugs Fitness Friday Link Up   

                                             





 Summer Salsa


4 tablespoons of extra virgin olive oil
4 tablespoons of fresh lime juice
1 tsp of cumin
1 or 2 cans of shoepeg corn
1 bundle of green onions
1 can of black beans

Add all together. I like to stick it in the fridge and let it get cold before I eat, if I can contain myself.  I  used it on my spinach and chicken salad last night and it was SO GOOD as a salad dressing.

By the way, biking into bootcamp this morning and I almost hit a deer.  Only in Iowa!

  5. This sounds delish! It reminds me of another salsa I've had, but that had sugar in the base. This is better because it doesn't!! Definately on the "to-try" list!
