Mexican Skillet Supper
Last nights supper was so delicious, so easy, and so healthy! Enjoy!
1lb lean ground beef, browned and drain
16oz jar salsa
8oz tomato sauce
1 1/2 cup water
2 cups uncooked whole wheat rotini
1 cup frozen corn, thawed
1 cup of black beans
1/2 cup shredded low fat mozzarella cheese or cheddar cheese
*I sprinkled the top with some lemon basil from my herb garden and it added a nice kick*
Combine browned beef, salsa, tomato sauce and water in large skillet. Heat till boiling. Stir in rotini and corn. Reduce heat, cover and simmer 15 minutes, stirring occasionally until pasta is tender. Sprinkle with cheese.
