Clean Eating Curried Turkey Burger Sliders


Tonights recipe, adapted from Clean Eating Magazine, was so tasty, and the more I am experimenting with different flavors(curry in this case), the better the meals are becoming. 

Ingredients:

1lb ground turkey or lean ground chicken
1/3 cup coarsley grated apple, left unpeeled
1/4 cup minced or coarsley grated minced onion
3 tbsp of ground flaxseed
1 tbsp of curry paste
Sea salt and ground pepper to taste
2 tsp of lemon juice divided
1 tsp of ground coriander, divided
1/2 cup nonfat plain Greek yogurt
1/2 cup peeled and grated cucumbers, drained
olive oil cooking spray
Arnold  MultiGrain Sandwhich thins
In a large bowl, combine turkey, apples, egg white, flaxseed, ginger, salt, and pepper, 1 tsp lemon juice and 1/2 tsp of coriander.  Mix in turkey and shape into 12-1/2 inch mini burger patties

In a small bowl, combine yogurt, cucumber, salt and pepper and remaining 1 tsp of lemon juice and 1/2 tsp of coriander.  Set aside.

Heat nonstick grill pan or large skillet on medium high heat and mist with cooking spray.  Cook patties, turning once, until meat is no longer pink in center, about 5 minutes.  Top patties with cucumber yogurt, dividing evenly and sandwhich between a Arnolds Multigrain Thin Bun(I received a .55 off coupon from Brook at Redhead Reverie)

The beauty of these things is that you can put any topping you want on.  Tonight, for example, I topped my thin bun with lettuce and spinach, turkey burger, 2 slices of avocado, yogurt topping. (yeah, I took pictures but they magically, seriously, diappeared off my phone)

P.S. The next morning I made a egg scramble with the leftover turkey and spinach and it was fantastic....
